Olive Oil Potato Mash

- 1kg of potatoes
- 25cl of milk
- 2tablespoons of cream
- 1 glass of very fine quality olive oil
- crush the cooked potatoes in either a mash making tool, or by hand
- cook them a bit longer if you want this step to be easier
- heat up in a pot by slowly adding the oil and stirring
- add boiling milk and cream
- Serve on the spot
- you may add basil and/or ground olive
- good for veal, poultry or roasted fishes
