Carrot Cake

Ingredients

  • 4 eggs
  • 250g of flour
  • grated lemon skin
  • 250g of ground almonds
  • 200g of carrots
  • 1 large tablespoon of (potato) flour
  • 1/2 a tablespoon of baking powder

Making

  • finely grate the carrots
  • separate egg yolks from white
  • mix yolks with sugar until you obtain a foamy paste
  • add the grated lemon skin, almonds and carrots
  • mix, add flour and baking powder
  • mix again
  • beat the egg whites until firm
  • incorporate them mixing from bottom to top of the dough
  • put in a buttered and floured tin
  • bake 45mins on medium heat
  • may be iced with zested sugar
