Carrot Cake

- 4 eggs
- 250g of flour
- grated lemon skin
- 250g of ground almonds
- 200g of carrots
- 1 large tablespoon of (potato) flour
- 1/2 a tablespoon of baking powder
- finely grate the carrots
- separate egg yolks from white
- mix yolks with sugar until you obtain a foamy paste
- add the grated lemon skin, almonds and carrots
- mix, add flour and baking powder
- mix again
- beat the egg whites until firm
- incorporate them mixing from bottom to top of the dough
- put in a buttered and floured tin
- bake 45mins on medium heat
- may be iced with zested sugar
