Oatmeal Raisin Cookies

- 3/4 cup brown sugar
- 3/4 cup white sugar
- 1/2 cup butter or margarine, room temperature.
- 1/2 cup applesauce
- 2 eggs
- 1 1/2 teaspoon cinammon
- 1 teaspoon ginger
- 1/2 teaspoon cloves and nutmeg each.
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 3 cups quick-cooking or old-fashionged oats
- 1 cup all-purpose flour
- 2/3 cup raisins
- Heat oven to 375°F. Beat all ingredients save for oats, flour, and raisins.
- Stir in oats, flour and raisins. Drop by rounded tablespoonfuls about an inch apart on greased cookie sheet and bake for 8 - 11 minutes until golden brown or edges lightly crisped.
Use other types of dried fruit, chocolate chips, or nuts in place of raisins. For a chewier cookie, add a tablespoon of honey.
