A preparation PR for after 2.7.0 realease.
I decided that it is worth also dropping PHP 8.0 based on Packagist PHP versions statistics.

  • release 2.7.0
  • create 2.7 branch

@j0k3r @nicosomb @Kdecherf are you OK to drop PHP 8.0 directly also based on statistics information? side advantage is that it will unlock directly directly the upgrade to Symfony 6.4 as it requires PHP 8.1
