Update to Jupyterlab 4 and Lumino 2

This PR addresses #210, providing updates to Jupyterlab 4 and Lumino 2.

• Fix Build (Current build check in CI is failing since status is not ok: @jupyterlab/latex v3.1.0 enabled X (python, jupyterlab-latex))

Thanks for updating the extension, @RRosio!

I bumped some versions, applied minor changes and updated docs. I am now able to run the extension in Lab 4.0 locally and in Binder.

Please, let me know if you would like to to add any more changes. Otherwise, please mark this PR as Ready for review, so that we can merge it and make a 4.0 release of jupyterlab-latex!
