The `maven-assembly-plugin` can't merge the files in `META-INF/services` which prevents the CDI container from loading

This PR updates the
booty-dukedemo to start a CDI container and inject a bean into the resource.As this is common practice in SpringBoot and Quarkus demos, I wanted to have the Jakarta altenative ;)
