Update deps to their lastest versions

it's been a while! :D Hope y'all having a great day.

This PR updates the following dependencies:

accelerate 0.29.2 -> 0.30.1
clip_anytorch 2.5.2 -> 2.6.0
transformers 4.39.3 -> 4.41.0
safetensors 0.4.2 -> 0.4.3
huggingface-hub 0.22.2 -> 0.23.1

I was not able to find any regressions in the updated packages. I am happy for people to test.
Otherwise, we are good to go. I will create a separate PR for a possible pytorch 2.3 update, as xformers has been updated to 2.3 and diffusers seems to be happy.
