Fix default option values

Hi there 👋 First of all, thanks for Headwind, really cool! Seems like Headwind provides the missing space elimination feature from the official prettier-plugin-tailwindcss, so I'll have to give it a shot soon.

This PR corrects the default values that are in the readme to be consistent with the paragraphs above ("Headwind will ... by default")

This will also require publishing to update the readme on the Visual Studio Marketplace page

Oh, maybe I'm misunderstanding what the options section of the readme is meant for - it seems that the values listed there are maybe *not* default values? 🤔

After reading thousands of pages of docs across many projects, I'm very accustomed to seeing the default values listed when options are presented, but maybe this common pattern is not what is intended in the Headwind docs...
