In what directory are Cryptomator vaults mounted?

I've got a rooted phone and I expected to see vaults in the /mnt/ directory but they are not there.
I think #35 is related but not the same.

In the mobile apps vaults aren't mounted, as there are no local files. Files are downloaded from the cloud storage and decrypted on demand, there is no such file system as in the desktop application.

I'm not using cloud storage, there is a "local storage" option in the app.

I presume files are being decrypted on demand here as well? Is #35 the correct issue to follow for making a FUSE-like mount?

Yes, local storage works the same. We can not mount a virtual filesystem, but #35 is correct if you want to access files in a filesystem-like manner.
