I propose some improvements to docker configuration

update to php 8.3 - seems to work with no problems
allow encryption key configuration via env variable
setting log_path to "php://stdout" makes logs appear in the apache logs (useful for kubernetes deployments)

I also have a helm chart with readonly fs and non root user configuration if you are interested.
