Update install docs to point to 2.7.1 IAM policy

Update installation IAM policy links to utilize 2.7.1 release files.

@josh-ferrell, we cut the release from the release branch, so the main branch is not up to date.

I think there might be a miss in the release activity that the live doc is not deployed successfully, so it's still showing v2.7.0 as version number in installation, will redeploy.
