  should be changed to:

  <ui:FontIcon Icon="{x:Static SegoeFluentIcons.Save}"/>

  You can also use Fluent System Icons like this (no need to specify FontFamily)

  <ui:FontIcon Icon="{x:Static ui:FluentSystemIcons.WindowSettings_20_Regular}"/>
