User documentation

Please note: We are painfully aware that user documentation needs updating, restructuring, and some gaps filling. This work has already started - we're currently in the process of moving any key documentation coupled to code from the wiki into the source tree. However, any documentation which applies across all branches/releases can remain in the wiki (although in some cases it might make sense to move it to the source tree too). See the Trello boards for more information on current sprint work and backlogs.
