I'm looking at the description about setting the coin.config file, it looks just like the zen.config file I have for my Zencash Wallet blockchain app I have running full synced on my Windows 10 PC. If so is setting up a daemon even necessary or am I completely off base on understanding this piece?
I'm trying to find a simple way to set up a pool node just as it was to set up a pool node for Vertcoin using OCM.
Feed back would be appreciated.

Unless it's a "lite" wallet (one where you connect to a server (like electrum, and get your information there) in most cases daemon, wallet, and node are interchangeable.
That being said, I can't quite grab what you're saying...
Do you want to mine ZEN or Lyra2REv2?

I was trying to find if there was an easy method to self-pool/solo mine ZEN like there is with a few other altcoins. I have been setting up full block chain Wallets on VMs I put together on Hyper-V and at first self-solo mining setup with the coin.conf file was the easiest to accomplish with DASH and LTC. VTC was a bit of a challenge because they disabled the use of solo mining, so my next step was to create a VTC node to have my own pool to mine from. This took me to a few different github repositories but none of them I could get to work off hand, but then a miracle happened in the form of One Click Miner (OCM) which made self pool simple and did most of the configuration work provided I specified the IP where my VTC Wallet is at.

NEXT is ZEN, I am trying to set it up in a similar matter since it too doesn't support solo-mining. I had
been reading up on Nodes for ZEN which lead me to these repositories but this feels just as complicated to configure as it was with VTC before I found OCM.
You have confirmed my suspicion that Daemon and the Coin Wallet apps are the same.
I have since moved on from trying this github to following the atlassian.net steps for configuring a ZEN secure node.
Prior I was going to try a setup using a Windows Hybrid configuration of this Z-Nomp/Daemon using GIT as most of the setup outside of Daemon, like Node.js and Redis were also available in Windows binaries. But this has proved too much of a challenge for my novice mind, so I'm trying the Ubuntu Zen node route for now.
