I guess I could improve the docs a bit.

For example, set THEME in web/.env to:

{"palette":{"type":"light","primary":{"main":"#6a1b9a"},"secondary":{"main":"#3f51b5"}}}

For dark theme set type to "dark".

https://material-ui.com/customization/color/#color-tool shows you the recommended colors. Pick from there, and be sure to replace if needed the named colors with the hex codes.

It'd be difficult to customize anything more than the colors.
