Need to fix theme to light mode in GraphiQL element in devportal

Description

Currently, in the latest version (3.1.1) of GraphiQL, the default theme is set to follow the system theme, causing conflicts (if the system theme is set to) with other UI components within the API Manager (API-M) Devportal which uses light theme. This behaviour disrupts the visual consistency.

Similar issues have been reported and discussed within the GraphQL community [1] with possible fix [2]. Hence need to upgrade GraphiQL dependency once this feature is available.

Steps to Reproduce

Follow documentation [1] to create and publish graphQL API from publisher portal and go to try out section in developer portal.
