Zotregistry at zotregistry.dev has released version 2.0.x and there seems to be quite a lot of changes.

We need to revisit the integration we do for OCI image caching documente here https://docs.educates.dev/custom-resources/workshop-definition#shared-oci-image-cache and see that everything still works with this new version as well as looking at potential new functionalities that can be incorportated into the integration
