Update stable version

The stable.txt file still references version v0.5.0, which is picked up by the install.sh script. Would it make sense to update it?

This version is too old, but the pulsarctl will not be released separately, which release with the StreamNative Pulsar.

In my opinion, the pulsarctl is better released separately.

I ran into this issue specifically. Since release v0.5.0 doesn't have an arm64 build it essentially breaks the entire process for me (and other arm64 users).

I was following the prepare helm release in pulsar documentation here (https://pulsar.apache.org/docs/2.10.x/helm-deploy/#prepare-helm-release) to run the prepare_helm_release.sh script. I can tweak the scripts as needed to download a newer version, but this should be updated.
