The merchant should be able to export (and import!) all the data from the app:

Settings
Payment requests (optional)

This will allow them to migrate from one device to another relatively painlessly.

Considerations:

The export format should be JSON. This will make import very easy.
Automated tests must be written to allow us to maintain backwards compatibility of the JSON export/import format.
