Is it possible to check the status of a user if they are online at the moment on the server? I am using the listGuildMembers function but it does not display the user status.

Apparently it's not available via those routes, only via Gateway:

https://discord.com/developers/docs/topics/gateway#presence-update

However, I've not used it so I can't help you with any practical examples beyond what the Discord API documentation says.
