All the theming info is at https://quarto.org/docs/output-formats/html-themes.html.

It should be easy to get back from from https://quarto.org/docs/websites.

It's linked at https://quarto.org/docs/websites/#config-file, but how about adding a subsection instead (so it's listed on the sidebar) called "HTML Styles" or "HTML Theming" with a sentence that says

See HTML Theming for details on customizing the look of your website.
