Where on docs.platform.sh should be changed?

What exactly should be updated?

We can get rid of the warning at the top about SimpleSaml v2

SimpleSAMLphp 2.1 is compatible with Symfony 6 and therefore Drupal 10, the new 4.x version of this project supports that.

Additional context

I believe Mizzou has some D10 projects set up now with SimpleSaml v2.1 if we need to verify that it works properly
