Pimento Cheese

Ingredients

  • 8 ounces extra sharp cheddar, shredded
  • 1/4 cup of softened cream cheese (~2 ounces)
  • 1/2 cup jarred pimento finely diced
  • 3 tablespoons of good mayo
  • 1/2 teaspoon of dried red chile flakes
  • Salt and pepper

Preperation

  1. Spread cheddar in a bowl (to prevent clumps) then mix it with cream cheese, pimentos, mayo, and chile flakes.
  2. Refrigerate; keeps good for up to a week.
