- 8 ounces extra sharp cheddar, shredded
- 1/4 cup of softened cream cheese (~2 ounces)
- 1/2 cup jarred pimento finely diced
- 3 tablespoons of good mayo
- 1/2 teaspoon of dried red chile flakes
- Salt and pepper
- Spread cheddar in a bowl (to prevent clumps) then mix it with cream cheese, pimentos, mayo, and chile flakes.
- Refrigerate; keeps good for up to a week.
