Chinese Hot Oil Noodles

Ingredients

  • 4 oz. dried wheat noodles (really any noodles, a single serving)
  • Some leafy greans (baby bok choy, spinach)
  • 1 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1/2 tsp Chinese black vinegar
  • Crush red pepper flakes
  • salt
  • Scallion
  • Cilantro
  • 2 cloves of minced garlic
  • 2 1/2 tablespoons of oil

Preperation

  1. Cook noodles al dente, when they are almost done (within ~30 seconds), add greens for a quick blanching.
  2. Drain noodles, set aside.
  3. In a heatproof (really important that it is heat proof), combine the ligh soy sauce, dark soy sauce, vinegar, crushed red pepper flakes, salt, scallion, cilantro, and garlic.
  4. Heat oil until shimmering (as close to smoking as you can get it) in a small pot. Pour hot oil over the soy sauce mixture.
  5. Add noodles and greens to the sauce, mix, and enjoy!
