Would be awesome if someone could PR some nicely written instructions that explain + recommend how to choose a license for the code (e.g. BSD) and a license for the content (e.g. CC0)

I'd recommend Apache 2.0, it's a BSD/MIT style license but has patent protection and what is essentially a built-in DCO (obviating the need to also have a DCO or CLA).

Not that I know of. That might be a good contribution.
