Switch to use central nf-core modules

Description of feature

At DeepLife we wanted to use some #scrnaseq modules, so we PR'd them to the central modules repo. For example:

• simpleaf
• starsolo

There will be some differences due to those modules following more closely the modules guidelines, but we should make an effort to switch across for ease of maintenance. I can volunteer to do it, but it might be a few weeks.
