The raw EXIF metadata can be queried through WebDAV.
As for which fields should be shown I'd go with the ones that are displayed in the web frontend (see https://github.com/nextcloud/photos/blob/master/src/views/PhotosTab.vue), but other ones could be shown as well if they make sense.
