Is Clarity tool can have multiple Project for single SharePoint tenant

Actually, We are planning to use clarity tool for our M365 Tenant Analytics.

We have big volume of sites and over all count of the sites also quite huge number. So, we would like to have multiple projects and under each project would like to have a group of sites for better tracking.

Is it possible to have multiple projects for a single SharePoint tenant ?

If yes, how we can proceed ? is there any article for the same ?

What all are the challenges to have site collection app catalog in every site in the tenant ?

What are the best practices to use this clarity tool.
