useprefix=true/false controls the behavior of "van Beethoven" and friends. Default is "van Beethoven" in the text and in the list of references. An alternative is "Beethoven" in the text and "Beethoven, van" in the list of references.

Make this a boolean option in langscibook.cls, with true as the default.
