During the Feb 14th ❤️ TOC meeting the topic of supporting s390x/ppc jobs came up. A concern brought up is there is no documentation how an end-user can run Knative on these architectures given IBM has some random patches somewhere out in the wild that are applied to our OSS releases.

@dsimansk suggested that a blog post would be a way to demonstrate how users can run Knative on these architectures.
