Combining datasets post download

I often download a month's worth of data at a time due to the connection with IRIS sometimes being unstable. It would then be useful to combine these datasets into one folder with the same Event-Info and other files, so that other processes can be carried out in one go, rather than for each month individually. Would this be possible?
