Refactor code to use ecmascript Classes

The implementation of js-data v3 uses functional inheritance and custom rolled utils.extend() logic. While this is ok, there are some outdated as well as buggy cases that would be better for readability and maintainability if refactored to use up to date ecmascript language features such as class's.
