Tidying up the released image

The current image includes layers containing all the cruft from this repo.

We only really need the .jupyter and content and .binder directories.

It would be worth reviewing what role the various other directories play, eg in supporting production, and perhaps make a cleaner build in the repo2docker Github action, or considering another sort of repo strategy.
