Is there a way to generate custom PDFs to produce Certificates on Course Completion (like in Moodle)? Teachers/Admins could also create Ad-hoc awards and such. If not this would be an excellent addition and will look into implementing it.

Did you have a look at the Honor Roll by Subject program? This program lets you generate PDF Certificates.
