I can see that you're using the official PHP 8.0 images, but I'm running into problems with this being outdated. It appears to install PHP 8.0.1, which means that it won't work with current Symfony components (that require at least 8.0.2), resulting in CI failures like this:

Your requirements could not be resolved to an installable set of packages.
Problem 1
  - Installation request for symfony/event-dispatcher v6.0.0 -> satisfiable by symfony/event-dispatcher[v6.0.0].
  - symfony/event-dispatcher v6.0.0 requires php >=8.0.2 -> your PHP version (8.0.1) does not satisfy that requirement.

The image this refers to on dockerhub appears to be up to date, so I guess this might be a caching issue in GitLab.

Just tested. It doesn't seem to be a caching issue.

Same problem here when trying to build a laravel project. It seems a laravel update bumped some symfony packages to the recently released 6.0.

Your requirements could not be resolved to an installable set of packages.
Problem 1
- Installation request for symfony/event-dispatcher v6.0.0 -> satisfiable by symfony/event-dispatcher[v6.0.0].
- symfony/event-dispatcher v6.0.0 requires php >=8.0.2 -> your PHP version (8.0.1) does not satisfy that requirement.
Problem 2
- Installation request for symfony/string v6.0.0 -> satisfiable by symfony/string[v6.0.0].
- symfony/string v6.0.0 requires php >=8.0.2 -> your PHP version (8.0.1) does not satisfy that requirement.
Problem 3
- Installation request for symfony/filesystem v6.0.0 -> satisfiable by symfony/filesystem[v6.0.0].
- symfony/filesystem v6.0.0 requires php >=8.0.2 -> your PHP version (8.0.1) does not satisfy that requirement.
Problem 4
- Installation request for symfony/property-info v6.0.0 -> satisfiable by symfony/property-info[v6.0.0].
- symfony/property-info v6.0.0 requires php >=8.0.2 -> your PHP version (8.0.1) does not satisfy that requirement.
Problem 5
- symfony/string v6.0.0 requires php >=8.0.2 -> your PHP version (8.0.1) does not satisfy that requirement.
- symfony/console v5.4.0 requires symfony/string ^5.1|^6.0 -> satisfiable by symfony/string[v6.0.0].
- Installation request for symfony/console v5.4.0 -> satisfiable by symfony/console[v5.4.0].
