A symbol suitable for representing an API (REST, SOAP) or a message broker (MQTT) -- information exchange endpoint.

Couldn't the existing Cog symbol represent an API? It often is symbolized with a gear. Or how about a plug and socket? I've seen that often, as well.

Plug/socket is a good metaphor.
Cog usually depicts settings/configurations in many computer application (e.g. macOS/iOS, Firefox, ...).
