The official eu mirror of BBB Inc. packages-eu.bigbluebutton.org has much better performance for installs for servers located in Europe/Africa/Western Asia, and has less issues with high load when new BBB versions are released.
The mirror packages-eu.bigbluebutton.org is hosted at Scaleway/Online.net in Paris and has good peering/transit within Europe.

I suggest switching the bbb_apt_mirror in defaults/main.yml to packages-eu.bigbluebutton.org and adjusting the descriptions of the value in /README.md.

This issue assumes that the eBBBa ansible role will mostly be used by communities in Europe. The mirror in France also works for other locations of the world, so this is just an optimization, not a breaking change or similar.
