Just wanted to let you know:

I'm seeing light text color on light background color in the dropdowns / settings screen.

Clean intall of Obsidian and latest dracula.

This happens when "Light mode" is chosen in Obsidian. Dracula doesn't support light mode, but the option needs to be there for PDF exports.

I have just overwritten practically all light mode colors ever used in obsidian so even when "Adapt to system" or "Light" is chosen, almost everything will look the same.

There is some stuff yet left changing, for example the down arrows on dropdowns change color, but it should give a better experience nonetheless if your system is set to light mode with a dark-only theme.
