We currently call the observation schema "v5", because we had 4 schema versions of observations for legacy mapeo. This schema is different (legacy was all JSON), and we are "starting afresh", so I suggest we reset all schema versions to v1. Note there are currently 2 versions of project.proto - this was just to test tooling and can also be removed before publishing v1.
