Improve default attendance date

The current default for the attendance page is the most recent attendance (for both students and mentors); it can be less confusing if this defaulted to the closest date that has not already passed.

In particular, this prevents mentors from specifying a word of the day for an incorrect date, and students then incorrectly take attendance.
