Failed to start cp-kafka-rest:latest image with default user

I'm trying to deploy Confluent REST Proxy on Kubernetes and the pod fails to start with the following error:

Command [/usr/local/bin/dub path /etc/kafka-rest/ writable] FAILED !
Stream closed EOF for cosie-kafka-rest/cosie-kafka-rest-6dbdb59474-vpxzq (cp-kafka-rest)

I checked #127 and also tried with appuser (1000) and ran into the same problem. I'm currently not allowed to run pods as root in my Company, which could be a workaround.

Are there any plans to fix permissions on cp-kafka-rest image as well?
