[FEATURE] -implement git config commit related options

Is your feature request related to a problem? Please describe.
As described in #91 (comment) coco should support
commit related git configs.

Here is a non exhaustive list of option that coco should be able to use. There might be more to add, don't hesitate to
suggest more if you think it's needed.

• commit.cleanup : this would require to implement git commit cleanup modes
• commit.gpgSign (see [FEATURE] implement gpg signed commit #91, [FEATURE] Support annotated and signed tags #269)
• commit.status : Would be nice to have when using "coco --edit"
• commit.template
• commit.verbose

I believe the other major one here is triggering post-commit hooks. I don't know whether that is happening now or not, but I suspect it is not.
