Clarify that the NO_COLOR=1 doesn't mean stripping all the ANSI escape sequences

$sbj. It seems like people think that this env var means not using any ANSI escape sequences, but some people, including the author of https://no-color.org, think that stuff like bold/italic can still be acceptable.
I suggest mentioning this corner case in the guide.
