It would be great to have Prometheus metrics for better visibility into the behaviour and performance of sso.

Add Prometheus instrumentation using the Prometheus client libraries.

This seems like a popular request, as mentioned in #5.

Thanks for creating this issue. I don’t think this is something that we have the capacity to implement right now, but we’d be happy to accept and work through contributions around this!
