Teach some altair interactivity

Both because it is really powerful and so much fun! Definitely something that gets students excited in my experience. This is not priority right now. A possible thing to cut out for this could be Databases? I find that is a bit advanced for novices and they are less likely to need that imo (but it is def important and should be a topic for intermediate learners (or optional in the book?))

This is something we can consider adding in the future! We don't need to cut anything out of the book to do it.

But as far as DSCI100 is concerned, we can't arbitrarily change the curriculum -- I believe that needs review and approval, but I might be misremembering.
