Do you need an operator for every organisation in a multi tenant / organisation installation?

We are asking because the operator is directly connected to an organisation. Can you operate several organisations with one operator?

Tyk Operator currently operates on a single Tyk Organization.
If you want to deploy it for multiple orgs, then you need to deploy multiple operators.
It should be possible when installing the operator to watch specific namespaces https://github.com/TykTechnologies/tyk-operator/blob/master/docs/installation/installation.md#watching-namespaces. Meaning that each team, environment, organization can have their own namespace inside the Kubernetes cluster.
