From the log:

Files found within the OneDrive folder! Checking to see if a folder named OneDriveBackupFiles exists.
A folder named OneDriveBackupFiles will be created and will be located on your desktop. All files from your OneDrive location will be located in that folder.
Successfully created the folder 'OneDriveBackupFiles' on your desktop.
Successfully moved all files/folders from your OneDrive folder to the folder 'OneDriveBackupFiles' on your desktop.
Proceeding with the removal of OneDrive.
Uninstalling OneDrive. Please wait...
Stopping explorer
Removing leftover files
Removing OneDrive from windows explorer
Restarting Explorer that was shut down before.
OneDrive has been successfully uninstalled!

What actually happened was it saved the following files, but NOT /documents/ - arguably the most important directory!

AppData
Apps
Creative Cloud Files
Pictures

I don't think anything of value was lost. I'm sure the replies to this will be "always make a backup" but it's such basic functionality to uninstall a program without blanket removing user-created files I'm stunned this was overlooked.

Dude I had the same issue just now and I lost my most important documents!
And it's been a month since you opened this issue and it still isn't resolved
