I'm not sure about this. I can see that in English it has the role of an adjective, but when you compare it with Matt.3.5, you can see that the role of χώρα is not so much as the main noun (with Ἰουδαία as its adjective), but instead χώρα acts as something that helps to define Ἰουδαία. In English we'd say "the region of Judea" or "the Judea region".

here is what I find, just FYI:
ἡ Ἰουδαία χώρα (Mk. 1:5) --- where the lexical form of Ἰουδαία is Ἰουδαῖος, αία, αῖον (BDAG);
πᾶσα ἡ Ἰουδαία (Matt. 3:5) --- where the lexical form of Ἰουδαία is Ἰουδαία, ας, ἡ (BDAG).
moreover, syntactically it's easier to to render ἡ Ἰουδαία χώρα as article-adjective-noun structure.
