Please consider adding "time till payout", I'd like to be able to setup a template sensor that calculates "$/btc per hour" based on actual payouts.

Would that work as an attribute of the unpaidAmount or would you prefer a dedicated sensor?

An attribute of unpaidAmount would be fine but what ever is easiest.
