Running NixOS VMs headlessly

On current https://nix.dev/tutorials/nixos/nixos-configuration-on-vm if I run the suggested ./result/bin/run-nixos-vm, on a headless machine (server) I get error:

gtk initialization failed

It makes some sense due to the following sentence being

This command opens a window

but it would be very nice if this article could also be used on headless servers.

I realize when i read through @nh2 comments in #768 , that i had a similar experience when i was writing the tutorial. I was imagining that it would be nice to have a slim non-gui option but to have this option in a nice way wasn't straight forward so i opted for the heavy default gnome setup.
i realize that my example was designed around my gnome setup at that time https://github.com/NixOS/nixpkgs/blob/b3381345a8493854d5fd04541c6cda739cb4b278/nixos/modules/installer/tools/tools.nix#L171
so i guess i should revise the example nevertheless.
